This Vietnamese Green is grown and processed by the female run Tan Huong Tea Cooperative in Thai Nguyen Province, Vietnam. Beth and Chris visited in April as the teas were being harvested and processed.  Beth told me it was quite an experience to meet the woman who organized the cooperative.  It has been a labor of love since 1998.

This green tea has a typical vegetal profile; more specifically, mild asparagus with a hint of sweet pea on the front. Good lingering mouth feel. Unlike some green teas this gets milder as it cools and does not exhibit any bitter characteristics making it a good choice for iced green.

Ingredients: 100% Vietnamese Green Tea

RECIPE

Green Tea BBQ Rub

Adding green tea to this rub uses the tea’s simple sweetness and adds a complex flavor structure to the meat.

¼ cup of Green Tea Leaves

½ tsp ground cumin

¼ tsp sage

¼ tsp black pepper

¼ tsp white pepper

¼ tsp cayenne pepper

2 tsp light brown sugar

1 tsp kosher sea salt

Directions: Blend all ingredients and grind well in mortar and pestle or food processor. Drizzle olive oil on meat and apply the rub. Let sit for 1-2 hours, before grilling. The meat can also be grilled in a hot cast-iron frying pan.
